Ingredients
2 large cucumbers (peeled)
1 tangerine (peeled)
2 blood oranges (peeled)
1 red grapefruit (peeled)
2 tbs. rice vinegar
1/4 tsp. sea salt
dash of black pepper
Directions
Cut the cucumber into thin slices and place in a medium bowl. Chop the tangerine, oranges, and grapefruit, reserving all the juices. Add the citrus fruits and juices to the cucumbers. Stir in rice vinegar, sea salt, and pepper. Serve immediately.
Yield: 2-4 servings
