4-6 Granny Smith apples (¼ “ slices)
2 tbs. raisins
1 tsp. ground cinnamon
pinch of pink Himalayan salt
½ cup of coconut palm sugar
½ cup uncooked rolled oats
¾ cup of all-purpose flour
4 tbs. butter (cut up into small pieces)
Preheat oven to 350 degrees. Grease an 8 X 8 baking dish with coconut oil. In a large bowl, add the apples, raisins, cinnamon, salt, and two tablespoons of the coconut palm sugar. Toss to combine. Place in prepared baking dish and set aside.
In a large bowl, mix together the rolled oats, flour, and remaining coconut palm sugar. Using a rubber spatula or your fingers, blend in the butter until clumpy. Sprinkle over the apple mixture. Bake until apples are tender and the topping is golden, about 50-60 minutes.
